How to make a basic wedding cake for less than £5 - The DIY wedding - How to save money on your beautiful wedding and keep things simple.

Not large in size, this one for example would feed around 12 - 16 guests.
A great way to "Bulk" this idea up is to add an array of cupcakes around the cake. Something for everyone and is bound to be under £10 total cost!

The sponge receipe: Makes 2 sponges

  • 200g caster sugar
  • 200g softened butter
  • 4 eggs, beaten
  • 200g self-raising flour
  • 2 tbsp milk & 1 tbsp vanilla extract

Two step cake:
  1. Heat oven to 190C/fan 170C/gas 5. Butter two 20cm sandwich tins and line with non-stick baking paper. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter.
  2. Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon, then bake for about 20 mins until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely.

The filling: Buttercream
One cup of icing sugar to half a cup of butter. Splash of milk, mix well and store in the fridge for half an hour to harden.
To make the filling, beat the butter until smooth and creamy, then gradually beat in icing sugar. Beat in vanilla extract if you’re using it. Spread the butter cream over the bottom of one of the sponges, sandwich the second sponge on top.

The topping: Royal roll icing with artificial rose buds.
Rust ready to roll icing with icing sugar, roll to fit cake. Lay over cake and trim excess.
Add artificial flowers to decorate and a plain ribbon for elegance.

- Place on a cake board and a cake stand if you have one.
Surround with matching cupcakes (plain white) and your ready to go.

Obviously the higher your budget the more fancy your cake can be. This is clearly not for brides with a huge budget who can afford hundreds of £ on a lovely proffessional cake. This is for helping brides have a lovely wedding on a very very small budget.
